Hooray for the magic of Fall as it has arrived here in New England! I feel so fortunate to be able to experience such beauty! The trees are all in full glory of reds, yellows, oranges and golds. And at least once every day this past week I have seen and heard flocks of geese flying south for their winter homes. All signs of the crisp and warm season of Fall that has gently settled into our lives for the next couple of months.

In my effort to embrace and welcome Autumn I choose a lovely recipe of Apple Acorn Squash to share you today. I discovered this recipe from a beautiful lady named, Bean who writes, creates and photographs for her blog called, Without Adornment. I was given the opportunity to explore Without Adornment this past month as it was my September assignment through the Secret Recipe Club. For those of you that prefer to stay away from gluten by choice or even necessity Beans blog is a must for you to check out. All of her recipes are gluten free unless otherwise noted. And they look fabulous! Along with all of her beautiful recipes, Bean shares stories of her adventures in life with her hubby along with her talented creations of cakes. Gorgeous, gorgeous cakes! Along with her adventures and recipes she also has a beautiful gallery of her photography. Such a talented lady I say!
I was delighted with how my Apple Acorn Squash came out. Completely easy to put together. Completely delicious! And oh yes, completely Fall.
I did add a little butter along with salt and pepper to this recipe. They can easily be omitted if you wish to stay clear of extra fat or sodium.
Apple Acorn Squash
recipe slightly adapted from Without Adornment
1 Acorn squash
2-3 apples, peeled and sliced
2 Tbsp brown sugar
1 tsp cinnamon
1-2 Tbsp butter
salt and pepper
Preheat oven to 375. Cut squash in half and then scoop out seeds. Season each half with salt and pepper if you wish along with a pat of butter. Toss apple slices with brown sugar and cinnamon and then carefully spoon into each of the squash. Another pat of butter can go onto of the apple pile if you are so inclined. Place squash halves in a baking dish with just enough water to cover the bottom of the dish. Cover with tinfoil and bake for 45 minutes or until squash is done. Enjoy!

Apple and raisin muffins with streusel topping
As mentioned before Ive been baking a LOT with apples these past few weeks. These muffins came about as I had 1 ripe banana and some apples to use up. I started with a banana and apple muffin and decided to add in raisins, nuts, spice and a streusel topping. The result was a wonderfully delicious and fragrant muffin which made for a perfect breakfast on the go.

Makes 15 muffins
For the streusel topping
25g flour
85 demerara sugar
1 teaspoon ground cinnamon
50g cold butter
25g pecans, chopped
For the muffins
100g brown sugar
50g caster sugar
220g plain flour
1 teaspoon bicarbonate of flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon mixed spice
60mls milk
1 ripe banana
80mls vegetable oil
2 large free range eggs
1 pot (165g) Muller light banana and custard yoghurt (or vanilla or apple flavour)
2 apples, peeled, cored and roughly chopped
100g raisins
75g pecans, roughly chopped
- Preheat the oven to 180C.
- Line 2 muffin trays with 15 muffin liners.
- Make the streusel topping by mixing all the ingredients in a bowl by hand. Set aside.
- In a large bowl, mix the sugars, flour, bicarbonate, baking powder, cinnamon, nutmeg and mixed spice.
- In a separate bowl, lightly beat the eggs and add in the mashed bananas, vegetable oil, milk ad yoghurt.
- Make a well in the dry ingredients and add the wet ingredients. Stir until just mixed.
- Add in the apples, raisins and pecans and mix.
- Divide the mixture evenly between the muffin cases.
- Top with streusel topping and bake in the pre heated oven for 20-25 minutes or until golden brown and a skewer insertedinto the centre comes out clean.
- Allow to cool in the tray for a few minutes before removing to a wire rack to cool completely.

Amazon and Apple end exclusive deal on audio books

Apple and Amazon have ended a deal that tied them into an exclusive contract for the supply and sale of audio books.
The deal was signed before 2008 when Amazon bought audio book supplier Audible, which had the Apple iBooks contract. Pressure from anti-trust regulators in Germany and the European Commission led to the deal being abandoned.
Competition in the audio book market should get a boost now the deal has ended,said regulators.

The terms of the agreement meant Audible could not offer audio books to any other company and Apple had to take audio books only from Audible.
The investigation into the Apple-Amazon arrangement over audio books was started by the German Federal Cartel Office in late 2015. It responded to complaints from German publishers who said the two tech giants were abusing their market dominance.
In Germany, said the publishers, more than 90% of all downloads of audio books were done via the Apple iTunes store or through the Amazon and Audible websites.
With the deal abandoned, Audible will now be able to supply firms other than Apple with audio books. In addition, Apple can now get audio books from other sources and sign up other publishers who can push their titles through its iTunes and iBooks outlets.
In a statement, competition regulators at the European Commission said they "welcomed" the ending of the exclusivity contract.
"This step is likely to improve competition in downloadable audio book distribution in Europe," said the statement.
The German Federal Cartel office said it had closed its investigation as a result of Apple and Amazon terminating the exclusive contract.

Youre probably wondering why I am attempting all these summer-y dishes in the middle of winter - first the Japanese anmitsu with matcha ice-cream and now this gazpacho, the Spanish cold and raw vegetable soup.
Sometimes not everything has to make sense, friends.
All I know is that I am possibly suffering from a bad case of winter blues that only my canine friend here can understand...

Just kidding!
I dont have the winter blues because I get to drink hot chocolate and have hot showers. *thankful* The dog above was only giving me the look because I wouldnt share my hot chocolate.
And the reason I made this gazpacho on a cold and wet day was because that day happened to be the 22nd July - a date marked in my diary to make this soup. Why?
Its time for my second contribution to Stephane Reynauds 365 challenge (initiated by publisher Murdoch books), of course! (First is here) The aim is for all keen foodies to cook through the cookbook 365 Good Reasons to Sit Down to Eat in one year!
Well, at least this recipe makes total sense to the rest of the world experiencing the summer heat at the moment.

This is not your usual Spanish gazpacho however. Instead of the typical cucumbers, onions, capsicums and garlic used to make a gazpacho, only apples are used here along with tomatoes! Many recipes Ive seen also use bread crumbs (or stale bread) into the blended soup, unlike this no-carb one.
Anyhow, to make this soup...

And youll need to cut the apples into both cubes (for blending) and matchsticks (for garnish!)
You could practice your knife skills here too!

Blend the apple cubes and tomatoes together into a puree (I used my bamix) and pour in the cider vinegar and olive oil. Season it up and youre good to go! Not surprisingly everything came together in less than 10 minutes! Speedy!

This is a light tomato soup sweetened by the apples while the spring onions give it a slight punch. The addition of the sour cider vinegar (apparently an age-old home remedy that we could all have more of!) complements the other flavours well while the apple matchsticks add a nice texture! *crunch*
As much as I enjoyed this refreshing gazpacho (which I had while all rugged up in a heated room in my make-believe-its-summer state of mind) I couldnt help feel something was missing. Perhaps I would blend in some bread to add more body to the soup next time!
Or perhaps my body was just craving for something steaming hot and hearty....
I think the next time Ill see this soup again would be on the hottest days in summer! :)

Apple and tomato gazpacho
Serves 6
Prep time: 20 minutes
- 6 tomatoes
- 3 granny smith apples
- juice of 1 lemon
- 2 bulb spring onion (scallions)
- 100ml cider vinegar
- 100ml olive oil
- salt and pepper
1. Cut a cross in the base of the tomatoes and plunge into boiling water for 30 seconds, then remove the skins.
2. Peel two of the apples, cut them into cubes, then cut the third (unpeeled) into thin matchsticks and combine with the lemon juice.
3. Finely slice the spring onions.
4. Puree the tomatoes with the apple cubes, add the cider vinegar, olive oil and spring onions and season.
5. Serve garnished with the apple matchsticks and drizzle with olive oil.
